That would likely require a specially designed board unfortunately.
Take everything I say with a pinch of salt, I might be wrong and it's a very *expensive* way to learn!

Intel NUC might work of course, it depends on what you're trying to do.

it would be easier to buy a portable monitor that gives you at least 6mm to 10mm of depth in the case and see if you can fit a xiaomi phone in there that can run windows or other custom roms... there's a youtube video of a guy who did something like this..
